Cheesy Chicken Parmesan Tortellini

This Cheesy Chicken Parmesan Tortellini is an easy and delicious one pan meal that my family loves. This one doesn’t require a whole lot of special ingredients and only takes about 30 minutes to make. It’s perfect for a busy weeknight dinner when things can get rushed and time is short, but you still need to get dinner on the table.

Ingredients

  • 2 large chicken breasts cut into cubes
  • Salt, pepper, garlic powder (for chicken)
  • 1/2 cup of flour
  • 1/2 tsp each of salt, pepper, paprika, garlic powder
  • 1 tsp Italian seasoning
  • 2 TBSP olive oil
  • 2 TBSP butter
  • 19 oz bag of frozen tortellini
  • 24 oz jar of pasta sauce (I used Rao’s)
  • 1/4 cup of water
  • 3/4 cup shredded mozzarella cheese
  • 1 cup shredded Parmesan cheese plus more for topping
  • Dried parsley
  • Prepping the Chicken

    To start things off, cube up a pound of chicken breast into bite sized pieces trimming off any fat or gristle. Season the chicken with some salt, pepper, and garlic powder. I don’t use exact measurements for this step.

  • Next, you’re going to grab a bowl and add in 1/2 cup of flour. Season the flour with 1/2 a teaspoon each of salt, pepper, garlic powder, and paprika along with a teaspoon of Italian seasoning.

    Toss your cubed up chicken into the seasoned flour and shake it around until it’s all coated. I like to use the Better Breader Bowl for this part to make things a little easier. On Amazon, check out the Breader Bowl here! This is my amazon affiliate/commission-able link.

    Cooking the Cheesy Chicken Parmesan Tortellini

    In a large skillet over medium heat place in 2 tablespoons each of butter and oil. Let that heat up for a minute until the butter melts and add in your floured chicken breast.

    Let that cook for 4-5 minutes on each side or until the chicken is golden brown and comes to a temp of 165 degrees.

    Once the chicken is cooked through sprinkle on about a cup of freshly shredded Parmesan cheese. Stir everything together allowing the cheese to melt over that golden chicken giving it a nice coating.

    Once the chicken is coated and the cheese has turned translucent remove it from the pan and set it to the side.

    Cooking the Pasta for the Cheesy Chicken Parmesan Tortellini

    Once the chicken has been removed from the pan add in a 19 ounce bag of frozen tortellini. Cover the pasta with a 24 ounce jar of your favorite marinara and about 1/4 cup of water.

    Then just stir that all together allowing it to come to a simmer cover with a lid and reduce the heat. Let that cook covered for 5-6 minutes or until the pasta is tender before removing the lid.

    Once the pasta is cooked remove the lid and sprinkle some freshly shredded mozzarella over the top. To finish it off, add the chicken back into the pan over the top of the pasta!

    Serving the Cheesy Chicken Parmesan Tortellini

    When serving the Cheesy Chicken Parmesan Tortellini sprinkle freshly shredded Parmesan cheese over the top of the chicken along with some dried parsley.

    This dinner is great with some garlic bread or bread sticks! I also serve it usually with a salad or some roasted broccoli.
